Kym and his kitchen team, (led by) Head Chef Todd Adams and Pastry Chef and Sous Chef Shaun Quade, use local and national seasonal produce as a starting point for dishes that both excite, and sometimes challenge, the palate.
The cuisine style is based in both European and Asian traditions and influences, combining classic techniques with a modern execution.
Urbane’s wine list features a range of European and Australian wines that are food friendly and carefully matched to suit the cuisine, with a focus on back vintages and iconic wines.
According to Sommelier Ramon Arnavas, sourcing wine for the restaurant takes a thorough knowledge of vintages and a lot of patience.
