Organics/biodynamics are used at Wild Soul, a very small family operated vineyard and winery in the Granite Belt of S.E.QLD, producing only dry red wines.
All wines are made from grapes grown on our 1.3ha vineyard.
The Shiraz vines were field budded in 1995 the Cabernet Sauvignon in 1996 and the Merlot in 1999.
The vines are trained to the Smart/Dyson system resulting in maximum exposure of the grapes to the sun and a large surface area of canopy.
Each vintage, family and friends arrive for an early pick of the still cold grapes and the crushing before lunch.
Open fermentation and plunging of the caps is followed by basket pressing into tanks and barrels.
All wine is barrel matured in a mix of new and old American oak, with the 2002 vintage having the cabernet in our first French barrel.
The wines are unfiltered , with no fining agents used either , as part of our approach to minimal interference .
However this does lead to some deposits, these can easily be decanted off.
Bottling is a simple gravity filler, corks capsules and labels are all applied individually.
After the bush fires destroyed the 2003 vintage, we have had to release our wines a year earlier. the 2005 shiraz, cabernet sauvignon are good to drink now.
The 2006 is a blend of drought affected grapes, young but big.t
The 2007 blend is again a drought blend , not as big as the 2006.
